Quinoa Basil Salad

1 cup dry red quinoa prepared according to package

1/2 c fresh basil chopped

1 T avocado oil

Sea salt and pepper

Tossed and set aside

1 bag baby spinach

1 c fresh broccoli raw or blanched

1/2 c chopped red bell pepper

8 baby carrots sliced thin

1/2 avocado diced

6 cherry tomato quartered

Juice of 1 fresh lime

1T avocado oil

2 T balsamic vinegar red or white

Black pepper to taste

1 T crumbled crispy bacon ( turkey if u prefer but traditional is fine it's a small amount for flavor)

1/4 c Manchego cheese diced

Toss all ingredients in salad. Add 3/4 warm quinoa and gently toss through. Spinach will wilt lightly. Top with remaining quinoa serve room temperature and
