Broccoli Pasta

Sometimes you just want pasta... This is an extremely simple dish, gluten free, that delivers  rich flavor and texture. Can be a side dish or a meal with added proteins like shrimp chicken or steak ...The black bean pasta is rich and satisfying and packs enough flavor to stand alone.

1 lb organic black bean pasta ( trader joes)

1 tsp garlic paste

2T olive oil

3 cups steamed broccoli florets ( under cooked as you will be sautéing broccoli as well)

Red pepper flakes

Ground black pepper

Italian seasoning

1/3 c plum tomato sauce

1/4 c shredded asiago cheese

In a large skillet Heat garlic paste in oil

Add steamed broccoli and dry seasonings and "toast" until slightly browned and nutty and add plum tomato sauce toss and set aside

Boil water and cook pasta according to directions ( I always undertook slightly al dente as this type tends to fall apart if overcooked)

Drain reserving 1/2 c pasta water and toss pasta into broccoli mixture. Add pasta water as needed for moisture and another drizzle of olive oil if desired too with shredded cheese

Serve immediately
