Banana Nut Bread


1/3 cup melted coconut oil

1/2 cup honey or sugar free maple syrup

2 eggs

2 bananas

1/4 cup of water

1 teaspoon baking soda

1 teaspoon vanilla extract

1/2 teaspoon cinnamon (I did 1/4 teaspoon cinnamon and 1/4 teaspoon pumpkin pie spice for a little pumpkin flavor!)

1 and 3/4 cup whole wheat flour

OPTIONAL: add ins such as chocolate chips, walnuts, raisins, fresh banana slices

OPTIONAL: 1 scoop of desired protein powder (I used vanilla)


Preheat oven to 325 degrees and grease a loaf pan. In a large bowl, mix together the coconut oil and maple syrup (or honey). Add the eggs and mix well. Then which in the mashed bananas and water. Add in the baking soda, vanilla and cinnamon (or pumpkin pie spice) and continue to whisk together. Lastly, stir in the flour until all ingredients are mixed together. Some lumps are ok! If the batter seems a bit dry (mine did once I added the protein powder, add a little bit of water). If you decide to add in any optional ingredients you would do so now. Pour the batter into your greased loaf pan and sprinkle lightly with cinnamon or pumpkin pie spice. Bake for 55 minutes, or until a toothpick inserted into the center comes out clean. Let the bread cool before slicing and serving. Enjoy!
